Ratana’s Green Papaya Salad

One of my favorite things to eat while sitting on the beach watching Daniel surf is a Green Papaya salad from Ratana’s.

She makes each salad to order! The crunchiness of the papaya mixed with the spiciness from the peppers topped with the added zest from a lime makes my mouth happy!

Toasted PB & J

Last night as my son made me a toasted PB&J I was reminded of a funny story. When I was a little girl and I had the tummy flu my mom was always very strict on what I could have. After throwing up she made me re introduce foods to my diet. I had to start out with ice chips. Mom would make ice chips by putting ice cubes in a zip lock baggie and hit them with a hammer. She would bring them to my bed side  in a  bowl with a spoon and tell me to only have one at a time. If was able to keep the ice chips down I would be able to have a piece of toast…plain. If after a few hours later I was able to keep the toast down, I was allowed to have saltines. The most anticipated introduction was toast with peanut butter and a sprite.
