Moving Boxes and Cheesecake Stuffed Strawberries
Sometimes time gets the best of you…..so does packing, moving, vacation and house hunting.
The last two months have been a whirl wind. Our whole house is packed up by room, color and number, stacked and held under lock and key. We have traveled on our yearly trip to Hawaii to visit the Ohana for a couple of weeks and came back to our not home to house hunt.
I have never hunted before so this is a first. I have shot a can before a few years ago. Does that count? I wanted the can mounted on the wall. My husband responded to my request with the rolling of his eyes.
The time I have spent in the kitchen the last couple of weeks has been mostly to throw away the garbage from our drive thru meals…..no joke. Oh ya, and to fry eggs. Oh ya, and to have coffee. It is difficult to cook in someone’s kitchen without my tools. I cannot adapt to somethings.
Today I decided to make Cheesecake Stuffed Strawberries at work. #WIN.
This is something I can make here or there, in a box with a fox, in a tree…..you get the point.
They are delicious, refreshing, and a must make. Spread a little Nutella on them to take them to another level.
Cheesecake Stuffed Strawberries
Ingredients
2 lbs strawberries, washed, hulled and semi hollowed out.
2 blocks cream cheese softened
Splenda and Vanilla to taste.
Directions
Mix cream cheese, Splenda and Vanilla in a bowl until smooth. Scoop cream cheese mixture into a zip lock bag. Snip the end off, fill strawberries. Lick Bowl.
