Green with Envy
Mint Oreo + Brownie + Green Royal Icing = Happy St. Patrick’s Mouth
Mint Oreo Cookie Stuffed Brownies
1/2 cup (1 stick) butter
1 cup sugar
1 teaspoon vanilla extract
1/2 cup all-purpose flour
1/3 cup HERSHEY’S Cocoa
1/4 teaspoon baking powder
1/4 teaspoon salt
2 Tablespoons Oil
1 Package Mint Stuffed Oreos
Heat oven to 350°F. Grease cupcake tins
Stir together butter, sugar and vanilla in bowl. Add eggs; beat well with spoon. Stir together flour, cocoa, baking powder and salt; gradually add to egg mixture, beating until well blended. Add Oil to make creamier.
Dip each Mint Oreo into brownie batter covering all of Oreo. Place in cupcake tin.
Bake 9-10 minutes. Run knife around edges to loosen from pan. Cool on wire rack.
Green Royal Icing:
1 egg White
1 tablespoon lemon juice
1 1/2 cup powdered sugar
Green Food coloring paste ( amount dependent on your preference of color.)
Mix egg white an lemon juice with electric mixer until combined. Add sugar and green food coloring paste. Spoon into a Ziploc immediately.
Snip corner end off and pipe onto brownies.
Add green sprinkles and serve.
