Saturday Brunch for Two
Saturdays are longed for around our house. A day where we can open our eyes and shut them again without worry. A day where you allow the sun to peak into your windows inviting you to play, but instead just cuddle for a while. A day where the teenager can…..do chores A day where the you are not controlled by a time clock. A day where your dogs rejoice with barking of your day long company. A day where we can turn on worship music and mosey about the house rejoicing. A day where you can make a delicious brunch for you and your sweetie.
That is exactly what we did this morning. Minus the teenager doing chores, he is out and about so we did them ourselves. I found this delicious looking recipe the other day on in my Google Reader and have since longed to make it.
Bacon and Egg Cups with Scallions, Swiss and Sharp Cheese
1/4 cup finely chopped scallions
1 cup thinly sliced Swiss and Sharp cheese (cut again in half)
5 sliced of bacon
1. Preheat oven to 350 degrees. I placed my bacon on a cookie sheet and baked it in the oven for about 6 minutes. Saute mushrooms in butter until light brown. I use a cast Iron skillet so some were crunchy, which I love. With each piece of bacon, I would cut the fat end off ( about the size of the bottom of the muffin tin) an place it in the bottom of muffin tin. Wrap the remaining slice of bacon around the muffin tin. Now you will place a layer of each; 2 or 3 slices of sauteed mushrooms, a sprinkle of scallion, slice or two of cheese. Then you will crack an egg in the cup. Add another slice or two of cheese, scallions, salt and pepper on top. Repeat with the rest of the cups.
2. Bake at 350 degrees for about 20 minutes, or until eggs are set.
This was a wonderful way to start our Saturday. Next up Almond Joy Cheesecake with some friends!
