Sweet & Spicy Lettuce Wraps

When I am not eating fast food and desserts, I try to eat good. Key word: TRY. I came across this recipes in one of my many food blogs I follow.

My phone rang, and it was my dad who was here visiting. He was calling to tell me he was coming over sooner than planned!!!

Now my dad and his wife had been on the mainland for a week or so gallivanting around in Oregon and had been eating, eating and eating. I was reading status updates from them stating that they were having to wear elastic waistband pants due to their new favorite past time. I thought it would be nice for them to have something light and tasty…….welcome Sweet and Spicy Lettuce Wraps!!!

Ingredients

~3 Tbsp. unsalted, dry-roasted peanuts, roughly chopped
~3 Tbsp. hoisin sauce
~2 Tbsp. cider vinegar
~2 tsp. low-sodium soy sauce
~1 tsp. fresh minced ginger
~1 tsp. dark sesame oil
~1/2 tsp. crushed red pepper
~1/2 tsp. minced garlic
~2 cups thinly sliced cabbage
~1/2 cup grated carrot
~1 cup canned, sliced water chestnuts, drained
~1 cup finely diced cooked chicken breast
~12 Bibb lettuce leaves. Cabbage works also

Directions

1. Place peanuts in a small nonstick skillet over medium-high heat; cook 3 minutes or until lightly browned, shaking pan frequently. Remove pan from heat; set aside.

2. In a small bowl, combine hoisin, vinegar, soy sauce, ginger, oil, pepper and garlic in a small bowl, stirring well with a whisk.

3. In a medium bowl, mix 2 Tbsp. peanuts, slaw, water chestnuts, and chicken; add sauce and toss well.

4. Spoon about 1/3 cup of chicken salad in the center of each lettuce leaf; Sprinkle each lettuce wrap with remaining 1 Tbsp. peanuts.  Serve immediately.
